Bhindi or Okra is a delicious main course vegetable dish filled with spices.

Ingredients:
- 1 1/2 lb okra (cut into 1/2 inch pieces or 2 bags frozen okra)
- 1 tsp salt
- 1 T corriender powder
- 1 T zeera powder
- 1 tsp chilli powder
- 1/2 tsp haldi powder
- 1 tomato cubed
- 1/2 tsp black pepper
- 3 onions
- 1/2 tbsp garlic crushed
- 3/4 cup crushed tomatoes( can works best)
- 1/2 cup oil
- Cilantro hand full
- Lemon juice
- Chopped green chilli optional
Method:
- Slice one onion and fry in oil until golden brown
- add crushed tomatoes and all spices and garlic...stir fry until oil separates(5 min)
- Add okra and fry on medium heat until almost done.
- Add little water as needed to prevent burning.
- Slice remaining 2 onion and sprinkle on top of okra.
- Cut one tomato into cubes and sprinkle on top followed by cilantro chopped cover and simmer until okra is done.
- Then remove from heat and serve.
- You may squeeze some lemon juice on before serving for some extra zing...also you may add chopped green chilles before simmering if you like.
