Ingredients:
- 1/2 c. shortening
- 1 c. sugar
- 2 eggs, beaten
- 2 c. all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 c. sour milk or buttermilk
- 3 tbsp. sugar
- 1 tsp. cinnamon
Method:
- In a large bowl, blend shortening and sugar; stir in eggs and set aside. In a separate bowl, combine flour, baking powder, baking soda and salt; add to shortening mixture alternately with milk. Mix sugar and cinnamon in a cup; set aside. In a greased 9"x5" loaf pan, alternate four layers of batter and sugar mixture. Bake at 350 degrees for one hour. Cool on a wire rack. Makes one loaf.
- I used butter-flavored shortening. It's all I had and it can't hurt, right? I blended the shortening and sugar together with a mixer.
- Then, I stirred in two eggs that I beat in a measuring cup.
- Stir together the shortening mixture and set aside.
- Mix the dry ingredients together in a separate bowl.
- Alternate adding the flour mixture and buttermilk to the shortening mixture.
- I finally have an easy system down with this "alternating" process. I add 1/3 of the flour mixture.
- Followed by half of the buttermilk. I repeat the step one more time and finish with the last 1/3 of flour.
- This is a thick batter.
- I mixed together the sugar and cinnamon. Yummy!
- I started by adding 1/4 of the batter to the loaf pan.
- Then, I sprinkled with the cinnamon-sugar mixture. I repeated the process three more times.
- End with a nice coating of cinnamon-sugar. Bake for one hour at 350 degrees.
- Allow to cool on a rack, if you can.
