Yorkshire Pudding




Ingredients
  • 3 cups sifted flour
  • ¼ teaspoon salt
  • 3 eggs
  • 1 cup milk
Method
  1. Sift flour and salt together.
  2. Beat eggs until light and add sifted ingredients.
  3. Add milk gradually and beat 2 minutes with rotary egg beater.
  4. Prepare pudding to pour into pan 30 minutes before beef has finished roasting.
  5. Place beef to one side of roasting pan and pour off small amount of fat.
  6. Grease an oblong pan with drippings and pour Yorkshire Pudding mixture into pan.
  7. Return to oven and cook about 30 minutes.
  8. Cut into squares and serve with roast beef.

Chicken and spinach samosas




Ingredients: 


For the dough:
  • 450g plain flour
  • ½ tsp. salt
  • 6 tbsp. vegetable oil
  • 6 tbsp. warm water
For the filling:
  • 60ml vegetable oil
  • 1 tsp. ground red chilli powder
  • ½ tsp. cinnamon
  • 4 tbsp. curry powder
  • 450g ground chicken
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tsp. minced fresh ginger
  • 225g of canned cooked chickpeas, washed and drained
  • 225g frozen spinach
  • Salt and freshly ground black pepper
  • Vegetable oil for frying
  • Raita


Method:
  1. Begin by preparing the dough. In a large mixing bowl combine flour, salt and oil and mix with your fingers until it resembles coarse bread crumbs. Add water and mix with both hands until fully combined and mixture holds as a ball. Turn out onto a clean flat surface and knead for 10 minutes until the dough becomes smooth. Flatten into a disc shape and set back in bowl and cover with plastic wrap to rest for 30 minutes while you prepare the filling.
  2. Set a large, heavy-based pot over medium-high heat and add vegetable oil. Add spices and stir until just fragrant - this lightly toasts the spices and forms the spicy base of the filling mixture. Add ground chicken and saute until slightly coloured. Add onion, garlic, and ginger and sweat. Add chickpeas and spinach then simmer for 10 minutes until liquid has evaporated and all the flavours have come together. Season with salt and pepper. Set aside and allow to cool (you can pour it out onto a flat platter to speed up the cooling process.
  3. Return to the dough and divide it up into 4 equal parts. Working with one piece at a time roll into a nice ball then using a rolling pin roll out into discs. Cut in half down the middle to form two half-circles. Working with one half at a time, rub a little water around the edges using your finger. Form a cone by folding along the straight edge overlapping the seam. Gently pinch at the fold to secure. Holding the cone in your hand fill with 2 tbsps of filling. Seal the top by bringing the edges together and crimping with your fingers or a fork. Do this with the rest to make 8 samosas. (Note: you can freeze them at this point if you wish).
  4. Heat vegetable oil to 185°C in a large heavy-based pot. Fry the samosas in batches (so as to not to over-crowd the pot) until puffy and golden. Remove with a slotted spoon and drain on paper towels. Season with salt and serve with Raita.

Potato Bondas

Ingredients:
  • Potatoes 200 gms. 
  • Besan flour 8 tblsps. 
  • Mustard seeds ½ tsp. 
  • Black dal 1 tblsp. 
  • Cashewnuts(chopped) 2 tblsps. 
  • Onions(medium size) 2 nos. 
  • Green chilies 6 nos. 
  • Ginger 1" piece 
  • Curry leaves As required 
  • Chili powder 1 tsp. 
  • Turmeric powder ¼ tsp. 
  • Lemon ½ piece 
  • Ghee or Oil 3 tblsps. 
  • Salt to taste.

Method:
  1. First boil the potatoes and then peel and cut into cubes. 
  2. Heat the ghee in a saucepan and add the mustard seeds. 
  3. When the mustard seeds start sputtering add the black daland cashewnuts. 
  4. When the above turns golden brown, add the turmericpowder, green chilies, 
  5. onions, ginger, curry leaves and stir till it is done. 
  6. Now add the potatoes and salt to the above. 
  7. Keep on low flame for 2 minutes and take off from the flame. 
  8. Next add lemon juice and mix well. 
  9. Make small balls out of this mixture and keep aside. 
  10. Using 1/2 cup of water, gram flour, chili powder and saltmake a thick batter. 
  11. Heat oil well in a deep frying pan and slowly dip the potatoballs into the oil. 
  12. Fry till the bondas are golden brown. 
  13. Remove and drain. 
  14. Serve hot with tomato sauce or green chutney.

Paneer Manchurian

Ingredients:

  • 1/2 cup flour
  • 1/2 tsp Chinese salt
  • 2 tbsp cornflour
  • 2 tbsp spring onions, chopped
  • 2 tbsp Soya sauce
  • 3 green chillies, chopped
  • 4 tsp ginger-garlic paste
  • 6 garlic cloves, finely chopped
  • 200 gms homemade paneer or cottage cheese

Method:

  1. Cut the paneer into square pieces.
  2. Marinate the pieces with salt and two teaspoons of ginger-garlic paste and keep aside for 10 minutes.
  3. Mix cornflour, flour, egg white, ginger-garlic paste, salt in a bowl and make a batter using little water.
  4. Dip the paneer pieces in this batter and fry in hot oil until they turn golden.
  5. In another pan heat oil and fry the chopped garlic cloves.
  6. Now add Soya sauce, spring onions, fried paneer pieces, green chillies, salt, Chinese salt, one and a half cups of water and let the ingredients simmer.
  7. Take three teaspoons of cornflour and half a cup of water and mix well. Add this to the boiling mixture and cook well until the sauce thickens. Add coriander leaves and serve hot

Healthy Macaroni




Cooking a macaroni recipe does not has to mean lots of calories, Chef has cooked a healthy macaroni recipe that is delicious and simple to cook.
Instead of macaroni cheese how about macaroni with vegetables and chicken?
This is a very tasty dish to make, great for pasta lovers that don't always want a creamy or cheesy sauce.
Red, green and orange peppers, zucchini, carrots, mushrooms and garlic give this dish lots of health benefits such as vitamin C, vitamin A and more including fibre.
Cooked chicken is used in this recipe which is added at the end of cooking to heat through, frozen chicken can be used as long as it is pre-cooked and ready to eat.
A great recipe to use up left over chicken from a Sunday roast.
If you do not eat chicken you can use quorn chicken or even eat it as a vegetable pasta dish, it is just delicious!
You can serve this wonderful macaroni recipe with fresh garlic bread.

Ingredients for healthy macaroni recipe
  • 1 large Sweet pointed red pepper/capsicum (chopped)
  • 1 Green pepper/capsicum (chopped)
  • 1 Orange Pepper/capsicum (chopped)
  • 3 Flat mushrooms (chopped)
  • 4-5 small Carrots (sticks)
  • 1 Zucchini (sticks)
  • 1 large tsp Garlic paste
  • 1 Tbsp Tomato puree
  • Salt to taste
  • 3/4 Cup of water
  • 1 tsp Tomato ketchup
  • Few drops of Worcestershire sauce
  • Pinch dried basil
  • Large pinch dried parsley
  • 3-4 Cups of Cooked chicken or Pre-cooked frozen chicken
  • Rice bran oil

 How to make a healthy macaroni recipe:
  1. Take a large pan and drizzle in a little oil.
  2. Add the carrots and cook on a medium heat for 5-10 minutes.
  3. The carrots should start to soften but not brown.


  4. Add the garlic zucchini and peppers and some salt.
  5. Cook for another 5-8 minutes stirring often so that the vegetables do not burn.


  6. Add the water, puree, herbs and mushrooms. 
  7. Stir well turn the heat up for a few seconds then turn the heat back down, place on the lid and simmer for 20 minutes.
  8. Stir frequently.




  9. Once the vegetables are cooked add the cooked chicken, stir often and keep cooking for a few minutes until the chicken is heated through.
  10. If you are using pre-cooked frozen chicken, add the chicken and simmer with the lid on stirring very often until the chicken has evenly defrosted and heated through.
  11. Taste and check for seasoning.


  12. Stir the chicken and vegetables through the macaroni and serve with fresh cracked black pepper.
  13. Enjoy healthy macaroni pasta recipe.
