Chicken Malai Kabab Recipe



Ingredients:
  • 1kg boneless chicken
  • 2-3 green chillies
  • 3 tbsp yogurt
  • 2 tbsp ginger paste
  • 2 tbsp garlic paste
  • 1 tbsp corn flour
  • 1 tsp black pepper powder
  • 1 tsp white pepper powder
  • 1 tsp chat masala
  • 1 tsp meat tenderizer
  • 1/2 tsp red chili powder
  • 1/2 tsp cardamom powder
  • 1/2 cup grated cheese
  • 1/2 cup fresh cream
  • 1/4 cup coriander leaves
  • 1/2 cup cooking oil
  • Salt to taste
  • Wooden skewers as required
Method:
  1. Squeeze out water from ginger garlic paste. Keep aside.
  2. Make a paste of coriander leaves & green chillies together. Keep aside.
  3. Take a tissue,remove extra moisture from the chicken.
  4. Cut the chicken into small pieces.
  5. In a large mixing bowl add white pepper powder,black pepper powder,red chilli powder,cardamom powder,ginger garlic paste & salt.Mix well.
  6. Put the chicken pieces. Mix well. keep aside for 1 hr.
  7. In another bowl add cheese,yogurt,cream, chilli and coriander paste,corn flour,oil n little salt.
  8. Make a smooth paste;ensure that no lumps are formed.
  9. Pour the chicken pieces into this mixture.
  10. Mix well to coat all the chicken pieces.
  11. Keep the chicken in refrigerator for 1 hour.
  12. Take out the chicken from refrigerator. Add meat tenderizer. Mix well and keep aside for 20 minutes.
  13. Soak wooden skewers in water for half an hour and Pat dry.
  14. Apply butter firmly on the skewers.
  15. Place the chicken pieces on skewers. Lightly brush with oil.
  16. Bake in the oven at 500 F for 15-20 min.
  17. Take out the skewers and turn to the other side.
  18. Put it back in oven for another 10 min.
  19. Remove chicken pieces from skewers.
  20. Arrange chicken malai kabab on plate with lemon slices.
  21. Sprinkle chat masala before serving.
  22. Chicken malai kabab is ready to serve.
