Minted Fruit Salad


Ingredients
  • 1 cantaloupe, rind and seeds removed, cut into small pieces with a knife or melon baller
  • 1 apple, cored and thinly sliced
  • 1/2 pound grapes, halved
  • 2 kiwis, peeled, quartered, and sliced
  • 1/3 cup fresh mint, chopped, plus additional for garnish
Method:
  1. Combine all the fruit and toss. Just before serving, add the mint and toss again. Garnish with mint sprigs. Serves 4.
