Sweet and Tangy Fish with Saffron Rice

We were given some fish (Crappie) and wanted to try something different with it. I decided to create a citrus sauce for the fish and make some rice topped with saffron to serve it with.


Servings (3-4 people):
6 fish fillets


Ingredients for fish Marinade:

  • 1 cup orange juice
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons Thyme Leaves



Ingredients for citrus sauce:

  • 1/4 cup orange juice
  • 1 tablespoon oil
  • 1 cup water
  • 1 tablespoon grated orange/orange zest
  • 1/2 cup brown sugar
  • saffron — Optional
  • salt, pepper, garlic powder — desired amount



Method:

  1. Prepare your fish fillets and marinade. You will need to marinade the fish for at least 4 hours in the refrigerator. I chose to marinade my fish fillets overnight.
  2. Once fish are ready to bake place in them in an oven safe dish and cover with foil. Pre Heat oven to 400°F. Place fish in oven and cook until ready, which will be approximately 30 - 35 minutes. Be sure to check if they are flaky and cooked since everyones oven is not the same.
  3. While your fish is baking you can prepare your citrus sauce that you can use as a dipping sauce, or topping for the fish fillets. Begin by heating the water and adding the brown sugar to the water. Then add orange juice, oil, salt, pepper, garlic powder, and saffron (optional). Finally add your orange zest to the sauce and allow it to cook until it thickens a bit. Remember to occasionally stir the sauce.
  4. I prepared white rice to go with this dish and added a bit of saffron rice to the top. I guess this was my way of giving it a Persian flavor.
  5. When the fish was ready I topped it with a bit of the sauce and left some sauce for anyone who wanted to add more. The sauce went well with the rice too.

Firecracker Grilled Alaska Salmon



Ingredients

  • 8 (4 ounce) fillets salmon
  • 1/2 cup peanut oil
  • 4 tablespoons soy sauce
  • 4 tablespoons balsamic vinegar
  • 4 tablespoons green onions, chopped
  • 3 teaspoons brown sugar
  • 2 cloves garlic, minced
  • 1 1/2 teaspoons ground ginger
  • 2 teaspoons crushed red pepper flakes
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt



Method 

  1. Place salmon filets in a medium, nonporous glass dish. In a separate medium bowl, combine the peanut oil, soy sauce, vinegar, green onions, brown sugar, garlic, ginger, red pepper flakes, sesame oil and salt. Whisk together well, and pour over the fish. Cover and marinate the fish in the refrigerator for 4 to 6 hours.
  2. Prepare an outdoor grill with coals about 5 inches from the grate, and lightly oil the grate.
  3. Grill the fillets 5 inches from coals for 10 minutes per inch of thickness, measured at the thickest part, or until fish just flakes with a fork. Turn over halfway through cooking.

Fish Rolls




Fish, is one of the most tasty and popular dish. You can make different dishes using fish. Here you can read about fish rolls which become very popular in india and paksitan these days.

Prep Time: 30 minutes
Baking Time: 45 minutes

Ingredient:

  • 12 fish pieces
  • 4 tbsp butter
  • 5 onions, chopped
  • 4 green chilli, slit
  • ½ tsp turmeric powder
  • 10 gm ginger, chopped
  • ½ cup cream
  • 1 cup yogurt, whisked
  • ½ tsp fenugreek seeds, broiled, powdered
  • ½ tsp green cardamom powder


Method:

  1. Roll each fish strip and secure with a toothpick.
  2. Heat oil in a heavy bottomed pan and sauté onions until soft.
  3. Add green chillies and ginger to the onions and stir fry for a few minutes.
  4. Add turmeric powder, yogurt, cream, fenugreek and cardamom powder, sauté for 10 to 15 minutes.
  5. Place the fish rolls in the sauce and cook on slow fire for 10 to 15 minutes or until fish is cooked. Remove from heat.
  6. Transfer the fish into a serving dish, remove the toothpicks.
  7. Strain the gravy and pour on top of the fish. Serve hot, garnished with green coriander and accompanied by steamed rice

Yellow Curried Leek with Griddle Panned Coley



Ingredients

  • 3-4 Carrots(cut into sticks)
  • 1 large onion(sliced)
  • 1 Leek(chopped small)
  • Handful Mushrooms(sliced)
  • 1/4 Cauliflower(chopped)
  • Olive Oil
  • Dried Parsley(large pinch)
  • Dried Coriander(large pinch)
  • Clove Garlic(chopped)
  • Chunk Ginger(chopped)
  • 1/4 tsp Chili Powder
  • 1 + 1/2 tsp Cumin Powder
  • 2 tsp Turmeric
  • 1 tsp Ground Coriander


Method

  1. First of all peel and cut your carrots into sticks and cook in a pan of water for 5-10 minutes.
  2. Then add your leeks and cauliflower and cook until soft. Turn the heat off then leave the pan as it is until needed - do not drain the water off as you will be using it as stock also.
  3. Now grind together your ginger and garlic in a mortar and pestle.


    For the Main
  4. Heat some olive oil in a griddle pan until hot - this only takes seconds.
  5. Place your fish onto the griddle turn the heat down a little and leave to cook for 7-8 minutes. Turn it over and cook for a few more minutes. Your fish may need turning again for a minute or two. Poke a skewer or use the opposite end of a spoon into the middle to check if it is hot - some people like fish rare but personally I like to know mine is hot and cooked in the middle.
  6. Meanwhile put your onions into a frying pan with some olive oil.
  7. Brown them off then add your garlic and ginger, stir well and cook for a minute.
  8. Add your spices turmeric, cumin, chili, coriander and stir well - you may need to drizzle in some more olive oil to break down the spices.
  9. Now scoop out your cooked vegetables and add to your onions with your sliced mushrooms.
  10. Add enough of your vegetable water to mix in all your vegetables together.
  11. Add your dried parsley and coriander leaves stir well then cover with a lid and simmer for a few minutes until mushrooms are cooked.
  12. Your fish should be cooked by now.
  13. Serve with your curried leeks and vegetables and enjoy!

Grilled mackerel with herbs – Ingredients required:
  • For herb puree
  • Blanched, drained and chopped parsley leaves 25 g
  • Unsalted butter 15 g
  • Peeled and finely chopped shalots 15 washed, drained, chopped watercress with stalks removed
  • Whipping cream 50 ml
  • Pommery mustard 10 g salt 2 g
  • Freshly ground white pepper 1/2 g
  • For mackerel
  • Mackerel fillets with bones removed and skin lightly scored 200 g
  • Olive oil 15 ml
  • Squeeze 10 ml Sea salt and freshly ground black pepper

Method
  1. Preheat the oven for 180 degrees. Heat saucepan and boil water in it. Add the parsley cook for about four minutes, remove from the water and transfer them to iced water. Strain the leaves and keep them aside.
  2. In another saucepan, soften the chopped shalots in butter for a few minutes. Increase the heat and add the watercress and spinach and cook for a while. Add the parsley, salt, pepper and cream. Stir well and boil, then remove from the heat. Pour all the contents into a food processor and blend well to get a purée. Taste it and correct the seasoning. Spread this purée on a large tray and let it cool for some time.
  3. Preheat the grill on full power. Season the fillets with black pepper and sea salt and place them on the tray skin side up. Grill for about 4-5 minutes according to the thickness of the fillets. Remove the fillets from the grill and squeeze lemon over the fillets. You grilled mackerel with herbs is ready
