Chinese Noodle Recipe


Ingredients:
  • 2lbs raw medium shrimp (peeled and deveined, with tails removed)
  • ½ cup soy sauce
  • 8 teaspoons cornstarch
  • ½ tablespoon fresh ginger (grated)
  • 6 garlic cloves (minced)
  • 4 teaspoons sesame oil (divided)
  • 2 cups carrots (shredded)
  • 2 cups cabbage (sliced thin)
  • 1 (15 ounce) can chicken broth
  • 7 green onions (sliced)
  • 12 ounces linguini (cooked and drained)

Method:




Step 1: In a large bowl combine shrimp, soy sauce, cornstarch, ginger, and garlic. Mix well and set aside for 10 minutes. Heat 1 teaspoon of sesame oil in a wok over high heat. Remove shrimp with a slotted spoon  reserving marinade. Add to the wok and stir fry until the shrimp are pink (2-3 minutes). Remove from the wok and set aside.




Step 2: Add another teaspoon of sesame oil to the skillet and add carrots. Stir try for 1 minute. Remove from the wok. Add the remaining 2 teaspoons of sesame oil and add cabbage and cook for 1 minute. Add chicken broth and the reserve marinade to the wok. Add the cooked shrimp and vegetables to the wok. Cook until the sauce has thickened (about 1 minute).



Step 3: Mix the shrimp and sauce mixture with the cooked linguini and mix in green onions.

Noodles With Pulses, Meat And Yoghurt

Ingredients:



Noodles: 

  • 2 cup Plain flour 
  • 1 tsp Salt 
  • 2/3 cup Cold water 
  • Additional flour 
Pulses Mixture: 
  • 1/2 cup Yellow split peas (daul nakhud) 
  • Cold water 
  • 1 cup Canned kidney beans w/liquid 
  • Salt 
  • 1 tb Oil 
  • 2 cup Finely chopped spinach 
Meat Sauce: 
  • 1/2 cup Oil 
  • 1 Medium onion; finely chopped 
  • 750 g Ground lamb or beef 
  • Salt to taste 
  • Freshly ground black pepper 
  • 1/2 teaspoon ground cinnamon 
  • 2 teaspoons ground coriander 
  • 1 teaspoon ground turmeric 
  • 1/2 cup Tomato puree 
  • 1/2 cup Water 
Chakah(Yogurt Sauce): 
  • 1 1/2 cup Drained yogurt 
  • 3 tsp Dried mint; rubbed 
  • 1/4 tsp Hot chili pepper (or more) 
  • 1/4 cup Finely chopped coriander 
  • Salt to taste.
Method:
  1. Sift flour and salt into a bowl, add water and mix to a firm dough, adding more flour if necessary. Divide into 2 balls and wrap in plastic. Rest for 30 minutes. 
  2. On a floured board roll out each ball of dough very thinly. Cut into 5 mm (1/4 inch) strips either while it is flat or by rolling up each sheet of dough and slicing with a sharp knife. Place noodles on a floured cloth, dust with flour and leave to dry for about 30 minutes. 
  3. Wash split peas well and place in a pan with 1 1/2 cups cold water. Bring to the boil and boil gently for 30 minutes or until tender. Add red beans and liquid and keep warm. In a large pot bring 8 cups water to the boil, add 2 teaspoons salt, oil and noodles. Put noodles gradually, stirring after each addition. Return to the boil and cook uncovered for 5 minutes. 
  4. Add spinach and cook for further 5 minutes. Drain in a colander and return to the pot. Add split peas and bean mixture with its liquid, toss ingredients lightly and keep hot over low heat. 
  5. In a frying pan heat the 1/2 cup oil, fry onion until soft and add ground meat. Stir over high heat until juices evaporate and meat browns lightly. Addsalt and pepper to taste, tomato puree, spices and water, cover and simmer 10 minutes, then remove cover and let moisture evaporate. Sauce should be oily. Combine chakah ingredients, add to noodles and toss well. Mixture should be moist. Place noodle mixture in a deep dish and top with keema. Stir at the table and serve in deep plates.

Pasta Breakfast

Method:
  1. First Boil the 1/4 cup of Pasta in a cup of water for 5 to 7 mins. and drain them. wash them with clean water and drain them again.
  2. Cook the soaked chickpeas in pressure cooker with little salt.
  3. Chop 3 broccoli florets ann keep aside.
  4. Chop a Tomato.
  5. Heat a Pan, add a tbsp of oil.
  6. Drop the chopped tomatoes to the Pan and saute it well. add salt and Pepper powder to taste.
  7. Add Broccoli and Cooked Chickpeas and saute along with the Tomatoes in the pan.
  8. Add Cooked Pasta to the Pan and mix well.
  9. Break a egg on heated Tava, sprinkle little salt and pepper powder over the egg and leave it for half a minute and transfer to the Pasta Bowl.
Serve Hot!!
